Valentine's / Galentine's Shortbread Cookie Recipe + Drink Pairing

Valentine's Day is fast approaching! Whether you are celebrating it with a significant other, loved ones, or your gals... be sure to show your love and appreciation for them (insert some cheese :P)!

This post is a great one for the gal or guy who needs to whip something up fast and in time. Girls, sometimes the way to your man's heart is with food...so why not make some yummy decorated shortbread cookies! These are beautiful tasty treats for a girls' night in as well. I had so much fun chatting with two of my closest girlfriends (one being Rosemary from @petite.cow, check out her foodie Instagram feed!) while decorating these cookies... and they were all eaten within two days! Guys, you can impress your woman by baking these cookies, and extra points for you if you put your heart into decorating it as well.



Here's the recipe for the cookies and the icing, courtesy of Samantha of @elleventy on Instagram. I am constantly WOW-ed at all the baked goods I see on her feed.... it makes my mouth water!



Shortbread Cookies (Valentine's Themed)

Servings:

~ 2-3 dozen cookies, depending on how big you want them

Ingredients:
- 2 cups of butter, softened
- 1 cup white sugar
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour

How to make:
1. Preheat oven to 350°F.
2. Cream butter and sugar until fluffy.
3. Stir in vanilla extract and mix.
4. Add flour and mix well. Add some food colouring if you want cookies to be of a different colour! We added a few drops of red colouring to make some of them look pink. 
5. Cut the cookies into the desired shape using a cookie cutter (for Valentine's, why not heart-shaped? :D) and put onto a baking sheet.
6. Bake for 10-12 minutes.

Vanilla Icing

Ingredients:
- 1 cup confectioner's sugar (icing sugar)
- 2 teaspoons milk
- 3 teaspoons corn syrup
- 1/4 teaspoon vanilla extract

How to make: 
1. Blend the sugar and milk together.
2. Beat in corn syrup and vanilla extract until icing is smooth and glossy.
3. If it's too thick, add more corn syrup.

Such pretty sweets also call for a sweet drink on the side. The [yellow tail] Red Mocato Bubbles is perfect for the ladies and I fell in love with this drink at first sip! This carbonated red wine has "the rosiness of red wine, the sweetness of Moscato and the sparkle of bubbles". The aroma is of fresh strawberries and raspberries and the flavour is enhanced beautifully by the bubbles. It has such a nice crisp taste.
